This is perhaps the most famous semi-sweet Georgian wine.
The wine is traditionally fermented with wild yeast that the winery has developed to give the wine a unique fermentation flavour. Fermentation takes place in open oak barrels made of special wood that ensures that the grape skins sink during the fermentation process. At the right time, the wine is separated from the skins and only the must that is released is drained and used for this exclusive wine.
The wine is then cooled and SO2 is added to stop the fermentation and to ensure that the required sugar content is maintained.
Grapes: The Alexandreuli/Mujureteli grape variety is grown in the Ambrolauri district of the Racha region in Western Georgia.
Colour: The wine is a beautiful red and is quite rich in sugar, which can be seen when the wine is swirled in the glass.
Smell: The aroma shows a character of slightly spiced cherries and a hint of wild yeast appears when the wine is poured.
Taste: the taste is soft, it shows powerful, pure fruit and the delicate structure of tannin.
The rich sweet fruit flavors that are completed by a touch of oak, develop during the fermentation and maturation process. The final product is sweeter than other red wines. A wine with a balanced fruit and acidity taste, which lingers on the palate for a long time.
Maturation: during the aging process, the fruit aroma of the wine refines and takes on a more spicy taste, with the residual sugar increasingly coming into its own.
